Ear esta gerando assim : xxxxxxxxxxx-0.0.1-SNAPSHOT

gostaria de gerar me Ear assim apenas (xxxxxxxxxxx) e retirar o -0.0.1-SNAPSHOT, como eu faço isso ??

Você precisa configurar o parâmetro finalname no plugin ear:
